Vegetable Tortellini Soup

This soup is a complete meal in a bowl.

Ingredients

  • 150 g courgette
  • 150 g carrot
  • 100 g dried tortellini
  • 60 g finely chopped onions
  • 30 g finely chopped leek
  • 700 ml vegetable stock
  • pepper & salt, to taste
  • Parmesan cheese, to garnish

Directions

  • Halve the courgette lengthways and cut into 2 cm pieces; peel the carrot and cut into 1 cm cubes.
  • Place all of the ingredients into the soup maker, close the lid and select the chunky soup program.
  • When the soup is ready, open the lid, pour into bowls and sprinkle with some Parmesan cheese.
